隨著中國(guó)新年的臨近,許多人都會(huì)抽出時(shí)間去拜訪親朋好友和家人,大家一起享受節(jié)日歡樂(lè)的氣氛。在節(jié)日期間,美味的菜肴和各種各樣的酒怎么搭配才能更美味、更出彩呢。雖然說(shuō)經(jīng)典白酒或幾瓶清淡啤酒可能會(huì)出現(xiàn)在大多數(shù)人的餐桌上,但葡萄酒也正在成為更受追捧的搭配。由于新年大餐的種類(lèi)很多,葡萄酒的種類(lèi)也很多,要找到完美的搭配可能比較難,但也并不盡然。
在新年的慶祝活動(dòng)中,餃子是一種常見(jiàn)的食物,新年的餃子怎能少了香檳與之相配呢? 一款好的起泡酒在酒體上雖然清淡,但能提供豐富的水果味,與餃子的清淡味道相匹配。當(dāng)然,如果你的餃子味道比較重,又喜歡就著大蒜和醋,那就試著選擇霞多麗(Chardonnay)或雷司令(Riesling)之類(lèi)的無(wú)氣泡酒。雷司令(Riesling)的甜度有很多種,一定要搭配“Halbtrocken”(德國(guó)的半干型)。而我更喜歡口感豐富的“卡比內(nèi)特”。
湯圓是甜甜的,所以可以找一款甜味的酒與它相配。在與甜點(diǎn)搭配時(shí),經(jīng)典法則就是選擇比你上的菜更甜的葡萄酒。從這個(gè)意義上說(shuō),摩斯卡托是完美的選擇,因?yàn)樗奶鹞恫粫?huì)太重,也不會(huì)有糖漿味,又有明亮的果味,和湯圓一起會(huì)很配哦。
麻辣的紅燒排骨絕對(duì)是一道口味較重的肉菜,不配紅酒就可惜了。像這樣味道豐富的豬肉菜,配上不含單寧的味道濃郁的紅酒會(huì)很好??梢栽囋囄骼⊿yrah) /設(shè)拉子(Shiraz)或果味歌海娜(Grenache)。這兩種葡萄酒都有很濃的李子味,能和豬肉的豐盛相調(diào)和。
年糕是節(jié)日期間會(huì)經(jīng)常享用到另外一種甜食。雖然通常也可以選擇一款比年糕更甜的葡萄酒做搭配,但在這種情況下,也可以選擇一款褐色的堅(jiān)果味葡萄酒來(lái)搭配。堅(jiān)果味的香氣與紅豆年糕的香甜混在一起,口感十分豐富。
在節(jié)日期間,最重要的是和所愛(ài)的人一起享受節(jié)日,分享快樂(lè)的時(shí)光。對(duì)于這些搭配,其實(shí)就是去嘗試和學(xué)習(xí)新的方式來(lái)享受節(jié)日的美食與美酒。
As the Chinese New Year fast approaches, many of us will take the time to visit friends and family to enjoy the festive spirit. With the holiday comes delicious cuisine and joyous conversation over an array of alcoholic beverages. While a classic bai jiu or several bottles of lager beer may be on most dinner tables, wine is becoming a much more sought after pairing. Since there are many types of New Years meals and many types wine, finding the perfect pairing can be difficult, but it doesnt have to be.
With most New Years celebrations, Dumplings are a common serving, and what better to serve on New Years than Champagne. A good sparkling wine is light enough in body but still offers enough fruit flavors that it will balance well with the light flavor of dumplings. If youre dumplings are a bit heavier in flavor with more garlic and vinegar try venturing to a still wine like Chardonnay or a dry Riesling. Riesling can range in in sweetness so be sure to go with something thats “Halbtrocken” or German for half-dry. I prefer a nice “Kabinett.”
Tangyuan, a sweet dumpling can also find a drinking companion in sweeter wine. The rule of thumb when paring to a dessert is to choose a wine that is sweeter than the dish youre serving. A Moscato would be perfect in this sense as it wont be heavy or syrupy but offer bright citrus sweetness that will shine alongside these sweet dumplings.
The sweet and spicy Hongshao Pai Gu is definitely a heavier style meat dish that can bring Red wine into the fold. A pork dish like this is packed with flavor so a heavier red that isnt to tannic will do nicely. Try a Syrah/Shiraz or a Fruity Grenache. Both wines tend to have deep plum flavors that will blend with the richness of the pork.
Nian Gao is another sweet dish you might enjoy this holiday. While the rule may be to choose a wine sweeter than the dish youre eating, in this instance a nutty Tawny Port to compliment the richness of a nian gao. The nuttiness of a tawny balances really well with a red bean paste nian gao.
During the holiday its most important to enjoy it with loved ones and share happy moments. With any of these pairings it is best to experiment and learn new ways to enjoy the food and drinks of the holiday.
